WThis is an easy interpretation of a cocktail featured on our latest drinks list. Designed as a large-volume pre-mixed which is loaded with the tastes associated with Christmas time, which makes it perfect for hosting a celebration. Any leftover citrus syrup for breakfast cocktails, desserts, or to make additional servings of the drink.
Bikini
Yields 10 servings
For the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar
To make the Premix (produces 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (see above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Cordial: Put all the items into a pot, bring to a simmer, agitating until the sugar dissolves. Then, turn off the heat and let it to cool down completely. Transfer into a sterilised bottle, cap it and refrigerate it in the fridge, it can be stored for about four weeks.
To make Premix: Mix the specified liquid ingredients into a sizeable container, allow it to infuse for an hour, then pass it through best through cheesecloth, so it's perfectly clear.
For serving: Add 85ml of the premix into your mixing glass packed with ice, and agitate lightly for one minute to cool it down. Pour into a chilled martini glass or similar, top with the cranberries adding the final touch using a brief mist of mandarin oil above the glass.
